Organics

When possible we try to obtain our fruit from organic or biodynamic growers. In general, what is biodynamic is also organic, but what is organic is not always biodynamic. The major impetus behind organic viticulture is avoiding the use of synthetic pesticides and herbicides in favor of natural remedies. It is commonly believed that grapes grown organically produce better wine, making it a win-win situation.

For a wine to be labeled as organic, however, sulfites are not allowed to be added at any stage in the winemaking process. Sulfur dioxide protects the wine from both oxidation and microbial spoilage, and it is very difficult to make a wine without it. While we would love to make sulfite-free wine, we add as little as we can get away with to keep the wine from being spoiled. Trust us, a good wine with a small amount of added sulfur is much better than a spoiled wine with no sulfur.
