Sauvignon Blanc

Sauvignon blanc, along with semillon, is one of the two major white grapes of Bordeaux. It is also the white grape of the Eastern Loire Valley, notably in Sancerre and Pouilly-Fume. More recently it has seen success in New Zealand and California.

Sauvignon blanc is commonly both tank aged and barrel aged. The grape is known for its high acidity and clean, crisp style with flavors of gooseberry, lime, asparagus, freshly cut grass, grapefruit, passionfruit, and even cat pee.

At Old World Winery we allow the juice a short amount of contact with the skin, rather than pressing the juice off of the skins immediately. The wine is completely barrel fermented and allowed to go through malolactic fermentation which creates a creamy sauvignon blanc. The acidity is high enough at picking, however, that the wine retains its crispness.
