Varietals

Varietal wines are a recent phenomenon in the wine world. While listing a varietal provides a clear and simple way to know what to expect in a wine, the best wines aren''t always labeled by varietal. At Old World Winery we often use a technique called co-fermentation, where multiple varieties are picked on the same day and fermented together in the same vessel. This creates a wine which is very expressive of the vineyard site without being dominated by the expression of any given variety. In each varietal page there may be listed wines made solely from that variety, blends which contain that variety, or both.

Sauvignon Blanc
